- Vegetable Lasagna (using whole wheat pasta)
- Soups & Stews (consider leftovers or some of those hearty beans and pastas)
- Mac & Cheese (whole wheat pasta and fresh shredded cheese)
- Pasta (with meat and cheese)
- Pasta (with vegetables)
- Meatloaf (see previous post)
- Tofu Mix (mix tofu with a veggie)
Another plus is that most of these foods can be eaten by the whole family, or frozen in portions to serve later. It's a good idea to always have something on-hand for when you decide to go too spicy for your own dinner or don't have the time to prepare a full lunch. Think about those days when you just got home from running errands and it's time to eat...NOW. Or, when the weather all of the sudden turns so nice that you just have to go to the park and need something to take for lunch.
