Single Dish Meals

When it comes to preparing meals for my boys, I want it to be easy. And, what's easier than something that is in a single bowl? I'm currently researching recipes, but here are some ideas to chew on.
  • Vegetable Lasagna (using whole wheat pasta)
  • Soups & Stews (consider leftovers or some of those hearty beans and pastas)
  • Mac & Cheese (whole wheat pasta and fresh shredded cheese)
  • Pasta (with meat and cheese)
  • Pasta (with vegetables)
  • Meatloaf (see previous post)
  • Tofu Mix (mix tofu with a veggie)
Don't forget the spices and any healthy additions like wheat germ or tahini.
    If you really think about it, almost anything can be put together into one pot for cooking or one mixed dish. I'm a personal fan of any baked pasta or casserole, so this is a natural direction for my family. We're already mixing vegetables with grains and legumes, fruit with yogurt, pasta with cheese. So, why not take it a step further and prepare some actual recipes with some more single dish meals? Stay tuned for my actual experiences coming soon.

    Another plus is that most of these foods can be eaten by the whole family, or frozen in portions to serve later. It's a good idea to always have something on-hand for when you decide to go too spicy for your own dinner or don't have the time to prepare a full lunch. Think about those days when you just got home from running errands and it's time to eat...NOW. Or, when the weather all of the sudden turns so nice that you just have to go to the park and need something to take for lunch.
