Super Porridge

Well, I tried this early on with brown rice and then again with millet with no success. My porridge always turned out really sticky and lumpy. I basically gave up, but have regretted that every time I think about it. It sounds like such a great, nutritious idea. I've been meaning to try again for the past couple of months and did so this morning. I ground organic oats and dry black beans in the proportions that Yaron recommends in her Super Baby Food book. It is so easy and she gives so many ideas of complete protein combinations that I just want it to work!

1. Bring 2 cups of water to boil.
2. Grind 1/3 cup organic oats and 2 oz. dry black beans.
3. Add powder to water, turn heat to low and continue cooking for 10 minutes while whisking to prevent clumps or sticking.
NOTE: I cooked for an extra 10 minutes and let sit for 10 minutes to try to thicken. It was still a little runny for me.

The result was just ok, but I could see promise for the future. It took much longer to thicken than expected and my boys were finished eating the other things I had scrounged up for breakfast. So, needless to say, it wasn't the optimal feeding time, but they each took a couple of bites. I put the rest in the fridge and will see how it holds up and try again tomorrow morning. I'll post more detailed the end of this week. I'm excited about this full protein meal without meat!!
